Growing up, I used to make homemade pancakes every Sunday morning with my family. We used the same recipe year-to-year and I could probably still recite it to this day. I thought it was the “gold standard” of pancakes, that is, until I found this recipe. So this day was not necessarily stressful academically, but I just had a lot of things I needed to get done. I needed to apply for licensure, do 100 questions to prepare to the NCLEX, prepare for my interview that I have later this week for a staff RN position on my unit, order a background check, place the order for my pin, and spend a lot of money on those various things. It was just a lot of logistical things that were looming over my head. Starting the day off right with a pancake brunch with Sam was a great way to start being productive.
This pancake recipe is similar to buttermilk pancakes, but you essentially make your own buttermilk with milk and vinegar and let it sour for a few minutes. This gives it a really fluffy texture and a delicious taste when cooked. I have made this recipe for my family since discovering the new way, and they absolutely love it and want to change their recipe to make it taste more like this one.

Ingredients:
- ¾ cup milk
- 2 tbsp apple cider vinegar
- 1 cup flour
- 2 tbsp white sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 egg
- 2 tbsp melted butter
- Chocolate chips (optional but highly recommended)
Directions:
- Mix vinegar and milk in a small bowl and let stand for 5 minutes
- In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt together
- Whisk the egg and the melted butter into the milk mixture
- Pour the wet ingredients into the dry ingredients and whisk until the lumps are gone
- Put large nonstick frying pan over medium heat. When heated up, use a ½ cup measure to pour the batter onto the pan, evenly distribute chocolate chips onto the batter in the pan
These pancakes taste super good, are relatively easy to make, and are a good way to relieve stress. There’s a lot of mixing and whisking involved in the recipe, so it allows for your mind to focus on the task at hand and get into a more productive mood while not really doing much of anything at all. Plus, you get the reward of eating something that tastes like it is straight from a restaurant in your own home. New stress level: 2/10.
